This delicious holiday recipe for cheesy potato soup is perfect for outdoor entertaining during winter.
The weather outside might not be particularly frightful here in Northern California, but it’s definitely cooling off. Fortunately, it doesn’t get so cold that you have to give up using the outdoor spaces at your home. If you’re planning to throw an outdoor party to celebrate the season, keep your guests warms with this delicious holiday recipe for cheesy potato soup! Plus, since you make it in the slow cookers it’s as easy as it is tasty.
To make this four portions of this dish, you’ll need:
- 6 peeled and chopped medium potatoes
- 2 teaspoons of instant chicken bouillon granules
- ½ cup of chopped onion
- ½ teaspoon of black pepper
- 1 ½ cups of shredded American cheese
- 1 12-ounce can of evaporate milk
- Your favorite baked potato garnish (e.g. bacon crumbles, sliced green onions, shredded cheese)
In your slow cooker, stir the potatoes, bouillon, onion, and pepper with 2 ½ cups of water. Cover and cook on low for 8 hours or on high for 4 hours.
Afterward, add the cheese and milk into the cooker. Cover again and cook on high heat for 30 minutes. Using a masher, mash the potatoes into the soup as much as you like (less mashing = thinner soup with more potato chunks).
Serve your soup with baked potato garnish for your guests to enjoy, and you have the perfect hearty dish for the next time your entertain outdoors!
