Dive Into Some Fall Treats

With fall in the air, a different crop of fruits and vegetables are ripening for our pleasure.  With upcoming Halloween parties and the abundance of food that will be served, here are some easy recipes for your consideration.

Apple Crisp

6 apples peeled, cored, sliced.  2 T sugar, ¾ Teaspoon cinnamon, ¼ teaspoon salt, ½ cup brown sugar, ½ cup uncooked rolled oats, 1/3 cup flour, and 4 T of cold unsalted butter cut into small pieces. Mix apples, sugar, cinnamon and half of the salt.  Place in baking dish.  Mix remaining ingredients and spread over apples.  Bake at 350 for about 1 hour.

Pumpkin Cookies

2 ½ cups flour, 1 t baking soda, 1 t baking powder, 1 t ground cinnamon, ½ t nutmeg, ½ t salt, 1 ½ cups sugar, ½ cup butter softened, 1 cup pumpkin, one egg and 1 t vanilla.  Mix dry ingredients.  Blend sugar, butter and then add pumpkin, the egg, and vanilla until smooth.  Slowly add dry ingredients until thoroughly blended.  Drop by tablespoon and bake 15 to 18 minutes at 350.

Acorn Squash

Cut acorn squash in half and clean out seeds.  Place on baking dish with ¼” water.  Brush insides with butter and sprinkle with brown sugar.  Bake for 1 hour, or until tender, at 400.
