Summer is the perfect time for entertaining. With the warm weather, backyard get-togethers are a great way to spend an afternoon. But the traditional pasta salad can get a little boring. ¼ cup extra virgin olive oil
2 tablespoons chopped garlic
2 tablespoons fresh oregano
1 teaspoon Kosher salt
½ teaspoon ground black pepper
¼ cup freshly squeezed lemon juice
zest from one lemon
½ cup pitted Kalamata olives
½ cup grape tomatoes
1 tablespoon fresh mint
2 tablespoons fresh basil
½ cup red onions
1 cup diced green bell pepper
1 cup artichoke hearts
crumbled feta cheese
Start by making an olive oil-lemon dressing. On the stove, heat the oil, garlic, oregano, salt, and pepper. Let it cook until the garlic has browned. Then add the lemon juice, and set aside the dressing to move on to the pasta.
Choose your favorite type of pasta and allow the noodles to cook. As you’re waiting for the pasta, start to prepare the vegetables. Halve the olives and grape tomatoes, and chop the onions, bell pepper, mint, and basil, and artichoke hearts. Set aside the vegetables in a large mixing bowl.
Once the pasta has finished cooking, drain it and add it in with the vegetables. Allow the dish to cool and then add the olive oil-lemon dressing. Toss the salad so that everything is coated with the dressing.
Refrigerate the salad until it’s ready to serve, and add the feta.
